Granola Bites Recipe

For the passed months, I've grown in love with granola bars. There was one time when I silently ate my daughter's granola bar in the dark with so much glee. (Sorry, Katy. Replaced it with a chocolate bar though.) Then I realized, why don't I make granola bites for myself?!? So last Thursday, I made granola bites with Katy and my niece Alika. They loved it! And I'm a happy mommy because oatmeal has been my best friend in combating my children's constipation. Hahaha!
So now I'm sharing our recipe with you!

GRANOLA BITES
INGREDIENTS
1 cup quick cooking oats
1/2 cup coarsely crushed cornflakes
1/4 cup chocolate chips (or more)
1/4 cup butterscotch chips
3 tbsp honey
1 tbsp olive oil
80g peanut butter
PROCEDURE
1. Turn on the stove and dry roast the oats for 2 minutes. Cool for 5 minutes.
2. In a large bowl, mix together all the ingredients using a wooden spatula.
3. Put a tablespoon of the mixture on ice cube trays or chocolate molders.
4. Place inside the freezer for 5 minutes then serve.
YIELD: Makes ~30 granola bites.
Some tips:
Make sure to cool the oats first before mixing so the chocolate and butterscotch chips will not melt. You may replace the cornflakes with rice krispies. You may let go of the butterscotch chips and make the chocolate chips 1/2 cup.
