I am also a member of several baking groups on Facebook to observe the trends in baking and to add more to my knowledge as well. Almost everyday, I read posts about new bakers who have questions about making fondant cakes. As much as possible, I respond to their questions because I know how awful it feels to have a #fondantfail.

One of the most common concerns was about how to make fondant stand as toppers. Well, here is my answer to that question: You don’t use fondant for toppers. There’s a completely different recipe that you should use for toppers. It’s called gumpaste.

Another common question is about the use of tylose. Tylose is a vital ingredient in making fondant and gumpaste. It serves as a binding agent and makes gumpaste and fondant more pliable. Some people even ask how much gumpaste is needed to make fondant. My answer: There is also no constant measurement for tylose. It is dependent to the weather condition while you’re making fondant or gumpaste. If it's hot outside, you need less of it. If it's rainy, you would need more.

Some bakers are also confused on how to compute for the price of their fondant cake. My answer: Compute your ingredients. The ingredients and other inputs (electricity, equipment, etc) usually account for 50% of the price. The remaining 50% would compensate for labor and profit. Furthermore, if the cake has a complicated design (like copying the looks of certain famous characters) you may charge higher for labor.
