Recipe: Fruity Cupcakes

Ingredients

½ cup unsalted butter or margarine

1 cup sugar

2 pcs large eggs

1/2 tsp vanilla powder

2/3 cup evaporated milk

¼ tsp refined salt

1 tsp baking powder

1 ¼ cup flour

fruit slices (mango, peach, pineapple or apple)

Procedure

  1. Preheat oven at 180oC for 15 minutes.

  2. Sift together flour and baking powder in a bowl. Set aside.

  3. Cream butter until soft, then add sugar, salt, and vanilla. Add eggs and mix.

  4. Pour in evaporated milk then add the flour mixture gradually. Continue mixing until the mixture turns smooth.

  5. Scoop batter into cupcake pans with cupcake paper liners. Put 1-3 slices of fruits on top.

  6. Bake at 180oC for 15-20 minutes or until toothpick test comes out clean.
